<strong>GEWÜRZTRAMINER</strong>

The vineyards in Trentino selected for the production of Gewürztraminer Musivum 2018 have been chosen within the most suitable areas for the cultivation of this variety: the hills surrounding the villages of Faedo, Sorni and Pressano at an altitude of 300 - 500 metres above sea level. The origin of the variety is still controversial and to date, the two main wine-growing regions where it is cultivated - Alsace and Trentino Alto Adige-Südtirol - dispute its paternity. The presence of a village named 'Tramin'-'Termeno' in Trentino-South Tyrol supports the hypothesis that the homeland of this extraordinary grape variety is indeed our region.

In German, the term 'Gewürz' means 'spicy', which accurately defines the special aromaticity of this coppery grape, unique and difficult to imitate. Regarding its viticulture, maintaining a high quality of this grape is a challenge. This is why it is only cultivated in areas that enhance its special characteristics, i.e. hillsides that are well exposed  but not too hot and with distinct temperature fluctuations. They are therefore located at a significant altitude to favour the development of the typical aromas and their precursors. This variety also requires particular dedication in terms of hours of work carried out in the vineyard.
Harvesting takes place in the second half of September, the exact period varies depending on the altitude and exposure of the vineyard. In order to allow the typical aromas of Gewürztraminer to form, the grapes tend to be slightly over-ripe: the 2018 vintage allowed the grapes to be picked when perfectly ripe, still fragrant and with exceptional aromaticity. The grapes harvested in perforated containers are in part sent immediately for crushing and in part cooled in refrigerated cells.
Prior to pressing, the grapes are destemmed, crushed and cooled, then cryo-maceration (or cold maceration) is carried out in order to prolong the contact of the must with the skin where the typical aromas are found; the low temperature results in the extraction of the most valuable aromas and substances whilst minimising the extraction of tannins that can cause astringency and bitter sensations.
Fermentation begins at a low temperature in order to further enhance the varietal's aromaticity and continues and gradually comes to an end at a controlled temperature of 18°C. For this variety it is essential to use special, carefully selected yeasts which manage to enhance the natural aromatic richness and complexity.
At the end of fermentation, until bottling, the wine remains in contact with its own yeasts, which release new aromas and protect it from oxidation.
